easy berry cobbler

I texted my husband last Friday afternoon "apple pie or cobbler or crisp?" He has traveled a lot for work this month and it is a gift to have him home. We decided it was a berry cobbler kind of day and I ended up blending several recipes (I can't help but do this! anyone else?). The result was simple and delicious. 

Easy Mixed Berry Cobbler

(modified from Blackberry Cobbler by Ree Drummond)

1/2 stick of butter, melted, plus more for greasing dish

1 cup + 1/4 cup sugar

1 cup self-rising flour (I used King Arthur Flour Unbleached )

1 cup 2% or whole milk

1 cup each of blackberries, blueberries, and raspberries

Whipped cream and/or vanilla ice cream

 

Preheat oven to 350 degrees F. Grease 3qt. glass pyrex dish with butter.

In medium bowl whisk 1 cup sugar with flour and milk. Whisk in the melted butter.

Rinse the berries and pat dry. Pour batter into baking dish, sprinkle mixed berries over batter. Sprinkle 1/4 cup of sugar over berry + batter mixture. Bake until golden brown, 50-60 minutes. Serve warm with whipped cream or vanilla ice cream.

I think Friday should be our new family dessert night. (Dessert leftovers on the weekend are always a good thing!) I would not put this in a "healthy" category, but I like that this recipe uses less butter than a cake. I also lowered the sugar a small bit from the original recipe, and the berries added the right touch of sweetness.
