a Southern classic Coca-Cola cupcakes recipe
freshly iced coca-cola cupcakes

Lee, my husband, and I lived far from family for several years. I am originally from South Carolina and Georgia, but early in our marriage jobs took us first to Kentucky and later to Minnesota. And after having our two kids we could afford to visit family once a year. I dearly missed our family and am so thankful we now live close enough in North Carolina for holiday visits!

At family gatherings my grandma, aunts, and mom always include wonderful desserts along with pulled pork barbecue and hash and freshly-grown vegetables. While visiting at Easter Grandma and I poured over recipes. One of my favorite recipes of Grandma's is Coca-Cola cake. This was my first time adapting the recipe for cupcakes and they turned out wonderfully!

Coca-Cola Cupcakes

Makes 18-20

1 stick (1/2 cup) butter

1/2 cup veg oil

3 tablespoons unsweetened cocoa powder (affl. link)

1 cup Coca-Cola

2 cups sugar

2 cups plain flour

1  1/2 cups mini marshmallows

1 teaspoons baking soda

1/2 cup buttermilk

2 eggs

2 teaspoons vanilla

Preheat oven to 350 degrees. Add cupcake liners (similar here, affl. link) to muffin pan. In large saucepan bring to a light boil first 4 ingredients (butter, oil, unsweet cocoa, and Coca-Cola). Turn off eye. Add sugar/flour (sifted together)...mix into boiling chocolate mixture. Stir in marshmallows.

Dissolve baking soda in buttermilk, stir in eggs and vanilla. Lightly whisk together. Stir egg/buttermilk mix into chocolate mixture. Pour into cupcake liners. I used 1 ice cream scoop per cupcake. Bake for 15-19 minutes.

Icing

The cupcakes are moist and have a slight fudge-flavor. And I am not going to lie: these guys are sweet and rich. You will definitely want a glass of milk with this cupcake.

And I just have to tell you: my whole family ate these cupcakes. Our kids are picky eaters, but the chocolate won them over.
