These Coca Cola cake cupcakes are crowned with a decadent icing boasting a luscious fudge flavor. Modified from Grandma’s original recipe, this icing adds the perfect finishing touch to an already delightful treat.

Chocolate Coca Cola Cake Cupcakes Ingredients

  • Butter
  • Vegetable oil
  • Unsweetened cocoa powder 
  • Coca-Cola
  • Sugar
  • Plain flour
  • Mini marshmallows
  • Baking soda
  • Buttermilk
  • Eggs
  • Vanilla

How to Make Chocolate Coca Cola Cake Cupcakes

Preheat oven to 350 degrees. Add cupcake liners (similar here) to a muffin pan. In a large saucepan bring to a light boil the first 4 ingredients (butter, oil, unsweet cocoa, and Coca-Cola).

Turn off the burner. Add sugar/flour (sifted together) then mix into boiling chocolate mixture. Stir in marshmallows. 

Dissolve baking soda in buttermilk, stir in eggs and vanilla. Lightly whisk together. Stir egg/buttermilk mix into the chocolate mixture. Pour into cupcake liners. I used 1 ice cream scoop per cupcake. Bake for 15-19 minutes.

  • Butter
  • Unsweet cocoa
  • Coca Cola
  • Confectioner’s sugar
  • Vanilla

How to Make Chocolate Coca Cola Cake Icing

Mix butter, cocoa, Coca-Cola, and vanilla in a saucepan. Bring to a boil over medium heat stirring frequently. Remove from the burner and pour over the confectioner’s sugar. Stir, icing will the thick. Add to top of cupcakes while cupcakes are fresh and hot.

Turn off the heat and add the sifted flour/sugar mixture to the hot chocolate mix. Will look a bit like brownie batter. Stir in marshmallows, marshmallows will dissolve a bit.

Quick tip: use an ice cream scoop, 1 scoop per cupcake!

Now, while the cupcakes are baking it’s time to work on the most delicious part: icing!

The cupcakes are moist and have a slight fudge flavor. And I am not going to lie: these guys are sweet and rich. You will want a glass of milk with this cupcake. 

And I have to tell you: my whole family ate these Coca Cola cake cupcakes. My kids are picky eaters, but the chocolate won them over.

Coca-Cola Cake Cupcakes

This is a classic chocolate dessert is made coca-cola, cocoa, buttermilk, and marshmallows. The icing is delicious and has a fudge flavor. Modified from my Grandma's Coca-Cola cake recipe.

Ingredients

  • 1 stick (1/2 cup) butter
  • 1/2 cup veg oil
  • 3 tablespoons unsweetened cocoa powder
  • 1 cup Coca-Cola
  • 2 cups sugar
  • 2 cups plain flour
  • 1 1/2 cups mini marshmallows
  • 1 teaspoons baking soda
  • 1/2 cup buttermilk
  • 2 eggs
  • 2 teaspoons vanilla

Icing

  • 1 stick (1/2 cup) butter
  • 3 tablespoons unsweet cocoa
  • 6 tablespoons Coca Cola
  • 16 oz confectioner’s (white powdered) sugar
  • 1 teaspoon vanilla
