Over past few years I grew increasingly envious of friends' gardens. There seemed something magical about it all. The idea of growing herbs and vegetables on the back porch and eating off the vine was so enticing that this year I created a container garden. I grew quickly loyal and protective of our little garden (especially in keeping it from our mischievous puppy.)

Thanks to my garden sensor I recently grew several tomatoes. I have long wanted to try cooking with green tomatoes. Fried green tomatoes are a southern tradition and are delicious on a BLT or over grits. BUT I am trying to eat healthy this summer, and fresh salsa is one of my favorite snacks.
Green Tomato + Peach Salsa
3/4 cup green tomatoes, diced
3/4 ripe peaches, diced
1/2 cup sweet onion
1/4 cup olive oil
1 tablespoon lime juice
chopped jalapeño (to taste)
cilantro for garnish
Stir together tomatoes, peach, onion, olive oil, jalapeño, and lime juice. Garnish with cilantro and eat with fresh corn chips.
The peaches give a mild sweet flavor. The onion and crisp green tomato give an earthy, fresh crisp crunch. I chopped just a bit of jalapeño for a mild spice, add more with seeds for a more intense salsa. Perfect for a casual summer gathering!
